This is the fourth in a series called Timbercrest Healthy Recipe of the Month, part of our effort to become a Healthier Tennessee Neighborhood.

Dreamy Chicken Lazone
Ingredients:
1.5 tsp mineral salt
1 Tbsp chili powder
1 Tbsp onion powder
1 Tbsp garlic powder
2 tsp paprika (smoked or regular)
1/8 tsp cayenne pepper (optional; add only if you like heat)
2.5 lbs chicken tenderloins (thawed)
6 Tbsp butter or olive oil
1 cup chicken broth
1/2 cup heavy cream (I use coconut cream)
Directions:
- Mix salt, chili powder, onion powder, garlic powder, paprika, and cayanne pepper in a small bowl. Sprinkle half the seasoning over the top of the chicken then turn the tenderloins over and coat the other side.
- Melt 3 tablespoons of butter in a large skillet over medium high heat. Add all the chicken and cook for six minutes, turning once.
- Reduce the heat to medium, add the chicken broth, cream, and the remaining 3 tablespoons of butter. Once the butter had melted, toss the sauce around the skillet and cook for 8 more minutes.
- Remove the pan from the heat. The sauce will thicken a little more as it cools but it is not supposed to be a thick sauce. Serve the chicken with the sauce on top.
I like to serve this dish with steamed potatoes or brown rice.
