This is the third in a series called Timbercrest Healthy Recipe of the Month, part of our effort to become a Healthier Tennessee Neighborhood.
This is one of my favorite breakfasts! It is quick, filling, healthy, AND my toddler likes it too! - Hope Ealey (Timbercrest Trail)
1 cup water
1/2 tbsp PB2 (could substitute almond butter or peanut butter)
1/2 cup rolled oats
1tsp ground flax seed
1/4 cup blueberries
1. In a small pot, bring water to a simmer.
2. Add the PB2 and stir until smooth.
3. Add the oatmeal and flax seed and cook until done, about 5 minutes.
4. Turn off the heat and stir in the berries.
