Dreamy Chicken Lazone, Recipe of the Month, July 2018

This is the fourth in a series called Timbercrest Healthy Recipe of the Month, part of our effort to become a Healthier Tennessee Neighborhood.

This recipe is soooo good! My whole family loves it! - Jennifer Leadbetter (Cliftgate Road)

Dreamy Chicken Lazone

1.5 tsp mineral salt
1 Tbsp chili powder
1 Tbsp onion powder
1 Tbsp garlic powder
2 tsp paprika (smoked or regular)
1/8 tsp cayenne pepper (optional; add only if you like heat)
2.5 lbs chicken tenderloins (thawed)
6 Tbsp butter or olive oil
1 cup chicken broth
1/2 cup heavy cream (I use coconut cream)

  1. Mix salt, chili powder, onion powder, garlic powder, paprika, and cayanne pepper in a small bowl. Sprinkle half the seasoning over the top of the chicken then turn the tenderloins over and coat the other side.
  2. Melt 3 tablespoons of butter in a large skillet over medium high heat. Add all the chicken and cook for six minutes, turning once.
  3. Reduce the heat to medium, add the chicken broth, cream, and the remaining 3 tablespoons of butter. Once the butter had melted, toss the sauce around the skillet and cook for 8 more minutes.
  4. Remove the pan from the heat. The sauce will thicken a little more as it cools but it is not supposed to be a thick sauce. Serve the chicken with the sauce on top.

I like to serve this dish with steamed potatoes or brown rice.
