BBQ time of the year is here! This is a recipe my Mom would make often in the summer time as a side dish or potluck. Easy and if you don't want to bake it, put it in a slow cooker instead for a longer period of time, once assembled! Baking does help reduce the juices and keeps the bacon crispy. Enjoy your summer!
CALICO BEANS
- 6 slices bacon
- 1/2 pound ground chuck or lean hamburger
- 1 medium size onion, chopped (1/2 cup)
- 1/2 c. catsup
- 1 t. salt
- 1/2 c. firmly packed brown sugar
- 1 t. dry mustard
- 2 t. vinegar
- 1 can (16 oz) pork and beans
- 1 can (16 oz) kidney beans
- 1 can (16 oz) lima or butter beans
- 1 can (16 oz) northern beans
Cook bacon in a large skillet until crisp; remove to paper towel to drain/crumble.
Cook beef in fat remaining in skillet until no pink remains. Add onion and saute just until tender.
Combine beef, onion, catsup, salt, brown sugar, mustard and vinegar in a 3-quart backing dish. Partially drain all the beans; add to baking dish, stirring gently to mix. Sprinkle with bacon.
Bake in 350 degree oven for 40 minutes.
